How much kalle pache does a family of four really need?

But when you are ordering for four, the first question is always the same: how much is enough? The short answer is that kalle pache is rich and filling, so a family of four rarely needs four separate portions. This guide walks you through the platter to choose, the bread, torshi and doogh to add, which parts adults and children each tend to enjoy, and how to time it so it lands on your table just as everyone wakes up.

Which platter suits four people?

At Shaun the Sheep our sharing platters come in four sizes: Single for one, Double for two, Full for around three, and the Khan, our largest platter, for a bigger group. For a typical family of four — two adults and two children — a Full platter is usually the sweet spot, because children eat smaller portions and the broth is very satisfying. If you would rather mix the parts more precisely, order a Double plus a Single instead: the same generous amount, but you get to choose two combinations instead of one.

If all four of you are hearty adult eaters with big appetites, size up toward the Khan or add an extra bowl or two of your favourite parts. Which parts do adults and children each enjoy?

Half the fun of ordering for a family is matching parts to palates. Grown-ups often reach for the deeper, richer cuts, while younger eaters usually prefer the mild, tender ones.

  • For the adults: tongue (zaban) and cheek (bonagoosh) are tender and full-flavoured, brain (maghz) is silky and rich, and trotters (paye) give that classic gelatinous body. Eye (cheshm) is for the truly adventurous.
  • For the children: plain broth (soup) with torn sangak is gentle and comforting, meat (goosht) is straightforward and familiar, and cheek and tongue are mild enough that many kids love them too.
  • For everyone: the Special Mix is a little of everything in one bowl, which makes it the easiest way to let each person taste and find a favourite.

How much sangak, torshi and doogh should you add?

The bread and sides are what turn a bowl of broth into a proper spread. For four people we suggest two sangak flatbreads — and it is worth making one of them our Special Sangak, the more generously topped version, for the table to fight over. Add the seven-year garlic pickle plus one more torshi so there is enough sharp, tangy contrast to go around. For drinks, doogh is the traditional partner; order one per adult and let the children choose between doogh, fresh lemonade or sharbat. Finish with a round of hot Persian tea.
