Kalle pache (Persian: کله‌پاچه) is traditional slow-cooked lamb head and trotters, hand-cleaned and simmered for around fourteen hours until the broth turns the colour of strong tea. You choose the parts you love — plain broth, meat, tongue, cheek, brain, trotters, tripe, or the Special Mix that gives you a bit of everything. Should a couple share a Double, or order two Singles?

Both are lovely, and the right answer depends on how the two of you eat. The Double platter is built for two: one generous spread to dip into together, ideal when you both like the same parts and enjoy grazing off one plate. Two Singles, on the other hand, let each of you order exactly what you want — one all trotters and meat, the other leaning to tongue and cheek — so nobody has to compromise. How do you set a cosy shared sofreh at home?

Half the pleasure is the setting, and a two-person sofreh takes almost no effort. A few small touches turn a delivery bag into a proper shared breakfast:

  • Lay a cloth or a tray in the middle so everything is within easy reach of you both.
  • Keep the broth warm and ladle it fresh into two bowls rather than letting one big bowl cool.
  • Tear the sangak into a shared basket — half the fun is dipping from the same bread.
  • Put the garlic pickle and torshi in the centre, with a small spoon, so each of you adds to taste.
