Dubai Hills Estate, Meydan and Nad Al Sheba

Kalle pache is lamb head and trotters, cleaned by hand and then simmered for around fourteen hours, long enough for the trotters to give their collagen to the broth and for the meat to let go of the bone. What a whole-house order looks like
The platters are built by headcount rather than by guesswork about appetite. The Single Dish is portioned for one, the Double Dish for two, The Full Dish for three and The Khan's Platter for six. That keeps the arithmetic for a villa simple: a table of six is one Khan's Platter, a house of five is a Full Dish and a Double Dish side by side, and nine at the table is a Khan's Platter plus a Full Dish. A Khan's Platter is also one order rather than six, and so one delivery rather than six.
Underneath the platters the menu breaks into singles, so a spread can be assembled part by part: eye, brain, meat, tongue, trotters, tripe, lamb cheek, brain soup, soup, and the special mix, mojoon, which puts several parts in one bowl. Free delivery over AED 300, settled before the driver leaves
Payment on the website is card prepay only. There is no cash on delivery and nothing changes hands at the gate; the order is paid before it leaves the kitchen, which is also why nobody needs to stand at the villa door with a wallet. Ordering for a set hour
The kitchen runs 24 hours a day, seven days a week, and kalle pache is traditionally a dawn dish — the pot has been on all night, so the natural hour to serve it is early. An order can also be placed for a future hour instead of for right now. Pre-ordering for a set hour matches the food to a gathering that has a fixed start: a Friday breakfast that begins at nine, a sofreh after a long night, a house where everyone arrives together rather than one at a time. The food is then timed against that hour instead of against the moment the order was placed. Because the kitchen never closes, the hour named can be any hour, including one before the rest of the house is up.
Addresses in a villa belt
Inland Dubai is laid out in communities, and villa and townhouse numbers can repeat from one cluster to the next. Give the number, the street and the community together rather than the number alone, because on its own it can belong to more than one part of Dubai Hills Estate, Meydan or Nad Al Sheba. If a community has more than one entrance, name the one you use — a driver at the wrong gate has to go round the outside of the whole community to reach the right one. Delivery moves the food; it cannot move the room. Broth is at its hottest at the table, because it starts cooling from the moment it is sealed for the drive, and sangak is hotter straight off the stone. The dining room in Jumeirah keeps the same 24 hours as the kitchen, and anyone in the inland belt who would rather drive in than have the food driven out can book a table.
