Because it is built from separate parts — lamb head and trotters, hand-cleaned and gently slow-simmered for about fourteen hours in the classic Tehran way — you get to choose which pieces actually land in your bowl. Which parts can you actually choose?
Think of our menu as a set of building blocks rather than one fixed dish. You can order these on their own or mix them together:
- Plain broth (soup) — the warm, clear base; gentle and comforting.
- Meat (goosht) and meat-and-fat — for a hearty, satisfying bowl.
- Tongue (zaban) — smooth, rich and a long-time favourite.
- Cheek (bonagoosh) — some of the most tender meat on the head.
- Trotters (paye) — silky and gelatinous, the real soul of the broth.
- Tripe (sirabi), brain (maghz) and eye (cheshm) — the traditional, adventurous parts.
- Brain soup and the Special Mix — a little of everything in one order.

Our honest advice: start gentle and build up over a few visits. If this is your first bowl, lean on meat, tongue, cheek and trotters, and feel free to skip the brain and eye until you're curious. There is nothing to prove and no rush — the broth alone with torn sangak is already a beautiful introduction. Next time, add one new part. Is the Special Mix a good idea?
If you genuinely can't decide, the Special Mix is the friendliest answer. It brings a bit of everything, so you can taste across the parts in a single order and discover which ones you'll ask for by name next time. Should you add sangak, torshi and doogh?
These are the classic companions, and they are yours to add or skip. Sangak is traditional stone-baked flatbread for tearing and dipping; there is also a Special Sangak with a more generous topping. Torshi — including our seven-year garlic pickle — cuts through the richness with a sharp, bright bite. And doogh, the savoury yogurt drink, is the traditional thing to sip alongside. Which platter size fits your table?
Once you know your parts, choose a size. The Single suits one person, the Double is made for two, the Full is a family platter for around three, and the Khan is our largest sharing platter for a whole group. Ordering for a crowd? Pick a bigger platter and let everyone pull the parts they love from the middle of the table.
What about allergens?
Kalle pache is served with bread and often with a yogurt drink, so gluten and dairy are worth keeping in mind, and you can simply leave those out when you choose your sides.
