If you've never had kalle pache, the gentlest way in is the one most newcomers choose: a bowl of plain broth (soup) with a little meat (goosht) or tongue (zaban) on the side. The broth is the heart of the dish — clear, deeply savoury, simmered slowly for about fourteen hours — and it carries all the flavour without asking you to commit to the richer parts straight away.
