How does delivery reach a gated frond villa?
The fronds are the part that trips up most drivers, because the Palm has one road in along the trunk and each frond sits behind its own security gate. A precise map pin does the heavy lifting. Drop the pin on your villa's actual gate rather than the general "Palm Jumeirah" label, then add the frond letter and villa number in the notes — for example "Frond G, Villa 24, garden gate." If your frond's security desk asks residents to clear visitors, a quick note that says "please call on arrival" saves the driver a full lap of the frond. For a big gathering, the Khan's platter feeds six with lamb cheeks, trotters, brains, tongues and breads; the full three-person dish suits a smaller family. Tear fresh sangak — or the richer special sangak — into the broth, lay out mixed torshi and seven-year garlic pickle, and pour tea and salted doogh alongside. What can you order, and how does it travel?
The full range comes to the Palm. Communal platters run from a single dish up to the six-person Khan's platter, and you can also order individual cuts — brain (maghz), tongue (zaban), trotters (paye), lamb cheek (bonagoosh), meat (goosht), eye (cheshm) and tripe (sirabi) — plus brain soup, plain soup and a Special Mix. We seal the broth hot and pack the meat, bread and pickles separately so nothing turns soggy on the drive. When it arrives, pour the broth over the meat, warm it gently if you like it steaming, and finish with pickle, a squeeze of lemon and doogh.
Is the lamb halal, and how is it cooked?
Yes. In the UAE all meat sold is halal by law and standard, and our lamb is halal. Every head and trotter is hand-cleaned before dawn, then simmered for around fourteen hours in a copper pot with onion, turmeric and garlic, and skimmed hourly until the broth turns the colour of strong tea.
